The ingredients:
For the brioche:
- 500g farine
- 180g beurre
- 16 cl milk
- 60g sugar
- 2 eggs
- 20g baker's yeast
- 2 sachets of vanilla sugar
- 1 pinch of salt
For the streusel:
- 200g farine
- 70g beurre
- 70g sugar
- 1 teaspoon of cinnamon
- 1 pinch of salt
1 egg for the egg wash
Recipe :
Step 1 – For the brioche:
- Dissolve the yeast in the lukewarm milk. Pour the flour into a mixing bowl. Then, add the salt, sugar, eggs, yeast, and milk to the center. Knead.
- Add the butter and knead until it is fully incorporated into the rest of the mixture.
- Place the dough in the warmest room of the house (near a radiator or fireplace), covered with a cloth for 1 to 2 hours (the dough should double in volume).
Step 2 – For the streusel:
- Mix together with your fingertips the flour, sugar, salt, cinnamon and butter cut into pieces until you obtain a coarse sand.
- Chill the mixture for 1 hour.
Step 3 – the continuation:
- Preheat oven to 180 ° C.
- Deflate the risen dough and form a ball. Divide the dough into 8 portions and shape into balls. Arrange them on a baking sheet. Brush the tops with beaten egg.
- Sprinkle the streusel over the top of the brioche. Cover with a clean tea towel and let rise again for 1 to 2 hours.
- Bake for approximately 30 minutes. Let cool before enjoying.
